Dietary Supplementation with Fermented Radix astragalus-ginkgo Leaves Improves Antioxidant Capacity and Meat Quality in Broilers

This study investigated the impacts of Aspergillus niger-fermented Astragalus and Ginkgo biloba product (FR) and its unfermented counterpart (NF) on the antioxidant capacity and meat quality of broilers. Three hundred one-day-old commercial Arbor Acres (AA) broilers were randomly assigned to 5 dietary treatment groups, including five experimental cohorts: the control group fed a basal diet; the NF group fed a basal diet supplemented with 3 g/kg of NF product; and the FR1, FR2, and FR3 groups fed basal diets supplemented with 1 g/kg, 3 g/kg, and 6 g/kg of FR product, respectively. No significant differences were detected in body weight gain, feed intake, and feed intake-to-weight gain ratio among all treatment groups. Compared with the control group, the FR groups showed significantly lower percentages of abdominal fat, intramuscular fat, and lactic acid (LD). When broilers were fed the FR3-supplemented diet, their water holding capacity (WHC) was significantly enhanced. At 42 days of age, the serum levels of glutathione (GSH) and α-tocopherol (α-TOH) in the FR groups were increased, while the serum concentrations of total cholesterol (TC), malondialdehyde (MDA), and hepatic reactive oxygen species (ROS) were significantly lower than those in the control group or NF group. Furthermore, the serum total superoxide dismutase (T-SOD) activity in the FR3 group was significantly higher than that in the NF group at 42 days of age.
