Whole-genome sequencing of kveik - Beer 2 Saccharomyces cerevisiae hybrids

Here, we explored the use of selected kveik strains in the generation of novel hybrids as a proof-of-concept to increase strain diversity in the brewing industry. We employed a spore-based breeding strategy to generate three novel hybrid brewing yeasts using Norwegian kveik and a commonly used Beer 2 yeast as breeding stocks.
