The set of data contains results of application of cold atmospheric pressure plasma on characteristics of physicochemical and nutritional properties along with plasma-liquid interactions of plasma-treated honey solutions. The research was carried out within OPUS 23 project (2022/45/B/ST8/02410) financed by National Science Center (Poland).The set of data contains (ZIP archive containing .txt form files):· pH values,· Conductivity values,· Mean concentrations of Al, Ba, Ca, Cu, Fe, K, Mg, Mn, Na, Sr, Zn,· Brix,· Total content of polyphenols,· OES spectra for 200-400 nm and 400-900 nm,· Nitrite and nitrate concentration,· Acquired data for UV/Vis,· Acquired data for ATR FT-IR.The dataset is provided as a compressed ZIP archive containing experimental results stored as plain text (.txt) files. For attenuated total reflectance-Fourier transform infrared spectroscopy (ATR-FTIR) and UV-Vis spectroscopy, the data are stored in separate .txt files for each analyzed sample. Each file contains the spectral data corresponding to a single measurement, allowing independent access to the spectra of individual samples. For optical emission spectroscopy (OES) results, measurements were performed for the samples with a concentration of 2.5%. Therefore, two OES spectra are provided per sample, each saved as a separate .txt file corresponding to different spectral ranges: one covering the 200-400 nm range and the other covering the 400-900 nm range. In addition the archive also contains individual .txt files including pH values, nitrite and nitrate concentrations, conductivity, metal concentrations, total content of polyphenols, and Brix values, each of these files contains the compiled results for all analyzed samples within a single file, rather than separate files per sample.
