Recirculating aquaculture systems (RAS) offer sustainable solutions for fish production by efficiently reusing water and minimizing environmental impact. However, one challenge in RAS is the occasional occurrence of off-flavours in fish, which can affect their marketability and consumer acceptance. These off-flavours are often attributed to microbial activity within the system. This project aims to delve into the microbial communities present in RAS and their role in off-flavour production. The project focuses on examining the diverse microbial communities within RAS, identifying the specific microorganisms responsible for off-flavour production in RAS, and to investigate the environmental conditions influencing off-flavour production in RAS.
