EEM fluorescence spectral dataset of olive-oil adulteration samples across five adulterant systems

This dataset contains 330 excitation-emission matrix (EEM) fluorescence spectra of olive-oil adulteration samples, generated and analysed in the manuscript "Open-world quantification of olive-oil adulteration from fluorescence spectra via optimal-transport alignment" (submitted to Nature Food). The dataset covers five adulterant oil systems (corn, peanut, rapeseed, soybean, walnut) at ten olive-oil volume fractions ranging from 9.09% to 90.91%, with three replicates per concentration. Each spectrum is recorded over 35 excitation wavelengths and 270 emission wavelengths. File format: tab-separated values (.dat). Each .dat file contains one EEM measurement. Directory structure encodes adulterant type, measurement round, and olive-oil-to-adulterant ratio. Custom code for reproducing the quantitative results in the manuscript is available at https://github.com/Zhanjun-Li/fluorescence_NonLinear.
