Fresh 'Mejhoul' date fruit cultivar was subjected to convective and infrared drying. The dried fruit according to each drying approach were analyzed for its physical and chemical quality based on relevant characteristics. The whole process of analysis was described in the published paper (https://doi.org/10.1016/j.lwt.2025.117502). All physical and Chemical attributes are reported in the 15 datasets based on quality attribute.
