Life cycle inventory and life cycle impact assessment datasets of an industrial-scale milk fractionation process generating 5 co-products: cream, casein, lactose and two whey-protein ingredients enriched in α-lactalbumin or β-lactoglobulin

This dataset includes the life cycle inventory (LCI) and the life cycle assessment (LCIA) of a farm-to-gate system where raw milk is separated at industrial scale into 5 coproducts : cream, casein, lactose and 2 valuable whey proteins α-lactalbumin (ALA) and β-lactoglobulin (BLG) enriched fractions. The LCI includes a table file with the detailed process diagram and allocation data, a table file with re-arranged LCI data as per 19 operation units, and a table file with the corresponding Agribalyse 3.0.1 or Ecoinvent 3.0 corresponding processus used. The re-arranged LCI data originate from the paper by Gésan-Guiziou et al. (2019), doi: 10.1016/j.seppur.2019.05.008, from complementary expert opinion and from complementary experimental measurements, as indicated. The LCIA includes calculation of the potential environmental impacts of 1-day production of the 5 coproducts, as per 4 allocation rules (mass, dry matter, protein or economic allocation), to evaluate the effect of the chosen allocation rule onto the distribution of the environmental burden between the 5 coproducts. It also includes a detailed life cycle assessment of the production of 1 kg ALA, using subdivision and different allocation and agregation rules, to identify hotspots of this production.
