Volatile organic compounds (VOC) are essential mediators of plant communication and play critical roles in defense, stress responses, and ecological interactions. In grapevine (Vitis vinifera L.), VOC such as monoterpenes, C13-norisoprenoids, alcohols, and aldehydes contribute not only to plant physiology but also to the sensory characteristics of grapes and wine. Their emission patterns vary with genotype, phenological stage, environmental conditions, and diurnal cycles. This dataset presents a comprehensive synthesis of literature on VOC emissions from grapevine berries, including data from pulp, skin, and must across various developmental stages. It includes approximately 800 unique VOC grouped into 14 chemical classes, with aroma descriptors available for 184 compounds. The dataset offers a structured overview of grapevine VOC diversity and serves as a valuable resource for ecological, physiological, and enological research, as well as for modeling studies related to VOC biosynthesis and grape aroma chemistry in the context of climate change.
