Torta del Casar and Queso de la Serena are traditional soft paste cheeses from Extremadura (Spain) with Protected Denomination of Origin (PDO). They are made with raw sheep milk and vegetable rennet from Cynara cardunculus L., matured over at least 60 days without the addition of a starter culture. The microbiome of different soft paste cheeses was evaluated via sequencing of the hypervariable V1-V9 regions of 16S rRNA gene and ITS region at four ripening times, on 2 independent replicates each, for a total of 48 samples, on an Illumina MiSeq platform.
