Zygosaccharomyces. siamensis is a relatively new species that was isolated from honey in 2011(Saksinchai et al. Fungal Diversity. 2012). We isolated this yeast while searching for sugar alcohol-producing yeasts and found that it produced arabitol, a type of sugar alcohol (Iwata et al. AMB Express. 2023). The strain obtained, Z. siamensis kiy1, produced the highest amount of arabitol among the isolates. The aim of this study is to reveal the mechanism of arabitol production in this strain and its response to sugar stress by analyzing the genomic data.
