Grape-must samples from the Greek cultivar Vidiano (Vitis vinifera L.), located in the viticultural area of Heraklion, Crete (Greece), were collected in 2019 and used for lab micro-scale fermentations at 10-L vinifications tanks. We evaluated, in spontaneous and commercial vinification the composition and succession of the fungal and bacterial microbiome.
