The characterization of Palmaria palamata xylo-oligosaccharides and their potential health benefits

In this dataset, we compiled the physical and chemical characterisation of the xylo-oligosaccharide-rich extract of Palmaria palamata and its potential health benefits through a series of different experiments, such as: HPLC-RID, FT-IR and MALDI-TOF to characterise its physicochemical properties; digestibility testing using RSIE and prebiotic testing with single-strain growth determination to evaluate its prebiotic potential; cytotoxic and immunomodulatory assays to determine its safety and other potential health benefits in different mammalian cell lines, as well as the study of its antioxidant capacity (DPPH and CUPRAC assays) and its antidiabetic potential using an enzymatic approach that measures alpha-glucosidase inhibition. The dataset is organised by experiment, meaning that each spreadsheet contains information relating to each experiment. Some of the sheets also contain screenshots of how some of the data was analysed using R software.
