Our study reveals that temperature minimums have a detrimental effect on olive tree growth, productivity, and ultimately, fruit yield. However, significant variations were observed among the cultivars tested. Some cultivars demonstrated a greater tolerance to moderate cold night stress compared to others. This resilience was evident through minimal morphological and physiological changes, including those related to vegetative growth, fruit yield, and fruit characteristics (both physical and chemical).Furthermore, the biochemical responses of the plants, measured by photosynthetic pigments, relative water content (RWC), total phenolic compounds, total flavonoids, and antioxidant enzyme accumulation, highlighted the differential stress tolerance capabilities of the cultivars. This finding was further substantiated by the contrasting responses observed across various aspects of plant phenology.These findings hold significant potential to revolutionize olive farming practices. By understanding how olive trees adapt to cold snaps, a prevalent stressor in open fields, farmers can make informed decisions. This includes selection of the most resilient cultivars for breeding programs and cultivation, ultimately leading to more robust and productive olive crops.
