Metagenomic analysis targeting the v3-v4 hypervariable region of 16S rRNA gene of Asiago PDO cheese produced in two different dairies and two consecutive days of production. Samples included the raw milk of which the cheeses were produced and the starter culture used in each dairy. Polled samples, one of each type, were also analysed by Shotgun metagenomics.
