Shotgun metagenomic analysis of microbial succession during goat cheese ripening

This BioProject aims to provide shotgun metagenomic sequencing data describing the microbial communities associated with spontaneously fermented goat cheese. The study covers multiple stages of cheese maturation as well as the final product, enabling the characterization of microbial community composition and functional potential across the ripening process. The generated dataset represents a resource for comparative analyses of fermented food microbiomes and supports reproducible metagenomic research in food microbiology.
