Originally, 240 non-starter lactic acid bacteria that were capable of surviving simulated digestion where extracted from 12 commercial Irish Cheddar cheeses. These were put through in vitro assays designed for testing probiotic potential. Of the 240 originally isolated, whole genome sequencing of the two most promising strains was undertaken, and the subsequently generated contigs were annotated using the NCBI Prokaryotic Annotation Pipeline.
