High CO2 treatment achieved significant acceleration of deastringency of ‘Jingmianshi’ persimmon fruit and subsequent softening, which could be retarded by adding 1-MCP. Comparison of the differentially expressed genes in the different treatments narrowed down the potential candidate genes for persimmon post-deastringency or softening. Samples of three treatments (CO2, CO2+1-MCP, control) at 0, 1, 4 days in storage were selected to perform the RNA-seq, and each had three replicates.
