We conducted an in vitro digestion study on four functional soups, analyzing their bioactivity at different digestion stages compared to undigested samples. analyses included:Anticholinesterase inhibition – Evaluating potential neuroprotective effects, possibly linked to anti-Alzheimer's activity.ABTS & DPPH assays – Measuring antioxidant capacity.Anti-GR (Glutathione Reductase) & Anti-GPX (Glutathione Peroxidase) activity – Assessing redox balance and potential protective effects against oxidative stress.SOD (Superoxide Dismutase) activity – Determining the ability to counteract superoxide radicals.
