This work was carried out with the aim to produce an innovative and healthy salami by replacing the pork fat with avocado pulp. Salami productions were performed under laboratory conditions without the addition of starter cultures. Experimental salamis were obtained replacing the pork fat partially and totally with avocado pulp, while control salamis were avocado pulp free.
