This proteomics study investigates the molecular mechanisms underlying the relationship between eating timing patterns and cardiovascular health in children and adolescents. We performed comprehensive proteome profiling of plasma samples from 51 participants categorized into three distinct eating pattern groups: extended eating window, late eating window, and early eating window. The analysis revealed significant differences in protein expression patterns associated with metabolic regulation, inflammation, and cardiovascular function between these groups.
