This study aimed to investigate the difference between two kinds of fermentation methods (post-packaging fermentation and post-fermentation packaging) in the quality and bacterial composition of Chinese glutinous rice wine from the Dazhu region, Sichuan province. Results showed the bacterial community structures and diversity of two kinds of glutinous rice wine were distinct. This implies that these bacteria may significantly contribute to the quality of Dazhu glutinous rice wine. The findings provided reference data for the improvement of the quality of Dazhu glutinous rice wine.
