Mezcal metagenomics from four events from Oaxaca and Michoacan, Mexico

In four Mezcal factories, we analyzed a single production batch tracing from the plants in the field to the end product. Representative composite samples were taken to extract total environmental DNA from soil, Agave plants, water, weevil (Sciphophorus acupunctatus [Curculionidae], utensils, cooked Agave juice, and three fermentation times at three different fermentation depths, surface, middle, and bottom of the fermentation vat. Shotgun sequencing was performed using an MGI platform.
