This dataset contains 16S rRNA gene sequencing data generated from an in vitro gut fermentation model (SHIME®) evaluating the impact of avocado-derived polyhydroxylated fatty alcohols (PFAs; avocadene and avocadyne). The model simulated colonic compartments under controlled conditions, with treatments including an avocado pulp matrix delivering PFAs alongside lipids and dietary fiber.
