This dataset contains raw and processed multi-omics data generated from a longitudinal, controlled crossover dietary intervention study. The study aimed to isolate the causal effects of consuming rice versus wheat as the primary staple food on the human gut microbiome and host systemic metabolism. The study involved 68 participants who underwent a period of strict dietary standardization, followed by a crossover intervention where their primary staple source was switched between rice and wheat. The design allowed for the isolation of staple-specific effects from habitual dietary backgrounds. This repository is centered on non-targeted metabolomics profiles from two key biocompartments: Fecal non-targeted metabolomics: Characterizing the functional output of the gut microbiome and diet-derived metabolites. Blood plasma non-targeted metabolomics: Characterizing the host's systemic metabolic response.
