本数据主要用于监测文成县索面铅指标的变化情况，用于监管部门加强对文成索面制作经营过程的监管。1.样品来源：本项目抽检的索面全部来源于文成县生产环节市场主体经营的索面。 2.数据检测：索面试样消解处理后,经石墨炉原子化,在283.3nm 处测定吸光度。在一定浓度范围内铅的吸光度值与铅含量成正比,与标准系列比较定量。 3.数据判定：铅含量的计算，X =(c1-c0)×V/m ×1000。试样铅含量，单位为毫克每千克或毫克每升(mg/kg或 mg/L)；式中:X为试样中铅的含量,单位为毫克每千克或毫克每升(mg/kg或 mg/L);c1 为试样溶液中铅的质量浓度,单位为微克每升(μg/L);c0 为空白溶液中铅的质量浓度,单位为微克每升(μg/L);V为试样消化液的定容体积,单位为毫升(mL);m 为试样称样量或移取体积,单位为克或毫升(g或 mL);1000为换算系数。铅在食品安全国家标准《食品中污染物限量》（GB2762-2017）为安全指标，索面中铅限量标准是不大于0.2 mg/kg，超过0.2 mg/kg则判定该批次不合格。 4.数据应用：通过抽检数据分析研判，对通过抽检发现的不合格率较高区域，加强该区域生产过程的监管，提升文成索面质量安全水平。This dataset is primarily used to monitor the changes in lead content indicators of Suomian (a local handmade wheat noodle product from Wencheng County), and to assist regulatory authorities in strengthening supervision over the production and operation processes of Wencheng Suomian. 1. Sample Source: All randomly inspected Suomian samples in this project are sourced from market entities engaged in Suomian production within Wencheng County. 2. Data Detection: After digestion treatment, Suomian samples undergo graphite furnace atomization, and their absorbance is measured at 283.3 nm. Within a specific concentration range, the absorbance of lead is proportional to its content, and the lead content is quantified via comparison with a standard series. 3. Data Judgment: The lead content is calculated using the formula: X = (c1 - c0) × V / m × 1000. The lead content of the test sample is expressed in milligrams per kilogram or milligrams per liter (mg/kg or mg/L). The definitions of each variable are as follows: - X: Lead content in the test sample, unit: mg/kg or mg/L; - c1: Mass concentration of lead in the sample solution, unit: micrograms per liter (μg/L); - c0: Mass concentration of lead in the blank solution, unit: μg/L; - V: Constant volume of the sample digestion solution, unit: milliliter (mL); - m: Weight of the sampled test sample or volume of pipetted sample, unit: gram (g) or milliliter (mL); - 1000: Unit conversion coefficient. Lead is a regulated safety indicator specified in the National Food Safety Standard Limits for Contaminants in Foods (GB2762-2017). The maximum allowable lead limit for Suomian is 0.2 mg/kg. A batch of Suomian is judged as unqualified if its lead content exceeds 0.2 mg/kg. 4. Data Application: Through analysis and evaluation of random inspection data, regulatory authorities will enhance supervision over the production processes in regions with relatively high unqualified rates identified via inspections, so as to improve the overall quality and safety level of Wencheng Suomian.
