Patulin is a mycotoxin produced by Penicillium, existing in apple and cider, which threaten human health and food safety. Saccharomyces cerevisiae can inhibit and degrade patulin during cider fermentation. Nonetheless, the specific metabolic mechanism is still unclear. Thus, Illumina RNA-Seq technology was applied to analyze the transcriptomic of Saccharomyces cerevisiae medium containing patulin and without patulin and then study the gene expression in this investigation. The findings of this study provide a new theoretical basis for improving the quality and safety of cider.
