铅是常见的重金属污染物之一。铅对人体具有慢性蓄积性的危害,长期摄入铅超标的食品,可能对人体神经系统、造血系统、心血管系统和泌尿系统造成损害。《食品安全国家标准食品中污染物限量》(GB 2762—2017)中规定,水果制品中铅的最高限量值为1.0mg/kg。本数据主要用于监测天台县流通领域水果制品铅含量指标的情况,通过检测数据,可以判断水果制品中铅含量是否符合食品安全生产标准,避免因水果制品铅含量超标导致的食品安全问题,为监管部门提供监管依据,进一步保障消费者的食品安全。1、样品来源:本项目抽检的水果制品全部来源于天台县市场主体销售的水果制品。 2.数据检测:根据GB5009.12-2017第二法,采用YQ519 ICP - MS仪器,对水果制品进行检测获取相关数据。 3.数据判定:铅的计算,x=(C1-C0)×f×v/(m x 1000)。X为试样铅含量,单位为mg/kg;C1为样品测得值,单位为μg/L;C0为试样空白测得值,单位为μg/L;V为试样消化液定容体积,单位为mL;f为试样稀释倍数;m为称样量,单位为g。计算结果保留三位有效数字。水果制品中铅限量标准是≤1.0mg/kg,超过则判定该批次不合格。 4.数据应用:通过抽检数据分析研判,我们可以判断水果制品中的铅含量是否符合安全标准,避免因水果制品产品本身的铅含量超标导致的食品安全问题。
Lead is one of the common heavy metal pollutants. It poses chronic cumulative harm to the human body. Long-term consumption of food with excessive lead content may cause damage to the human nervous system, hematopoietic system, cardiovascular system and urinary system. According to the National Food Safety Standard Limits of Contaminants in Foods (GB 2762—2017), the maximum allowable limit of lead in fruit products is 1.0 mg/kg. This dataset is primarily used to monitor the lead content of fruit products sold in the circulation sector of Tiantai County. Based on the test data, we can verify whether the lead content in fruit products complies with food safety production standards, prevent food safety incidents caused by excessive lead in fruit products, provide regulatory basis for relevant supervision departments, and further safeguard consumers' food safety.
1. Sample Source: All fruit products sampled in this project are sourced from fruit products sold by market entities in Tiantai County.
2. Data Detection: According to the second method specified in GB 5009.12-2017, the YQ519 ICP-MS instrument was employed to detect fruit products and obtain relevant test data.
3. Data Judgment: The calculation formula for lead content is x=(C1-C0)×f×v/(m×1000). Here, X represents the lead content of the sample, with the unit of mg/kg; C1 is the measured value of the sample, with the unit of μg/L; C0 is the measured value of the sample blank, with the unit of μg/L; V is the constant volume of the sample digestive solution, with the unit of mL; f is the dilution factor of the sample; m is the mass of the weighed sample, with the unit of g. The calculation result shall be retained with three significant figures. The limit standard for lead in fruit products is ≤1.0 mg/kg. If the detected value exceeds this limit, the batch is judged as unqualified.
4. Data Application: Through analysis and evaluation of the sampling inspection data, we can determine whether the lead content in fruit products meets the safety standards, thereby avoiding food safety issues caused by excessive lead content in the fruit products themselves.
