To evaluate the health effect of clarified apple juices (CAJ, eliminated pectin and additives) with different processing degrees, including not from concentrate and from concentrate CAJs (NFC and FC), on SD rats, especially on the gut microbiota, this study was conducted. An 8-week experiment, including juice-switch after the fourth week, was designed. Integrated analysis of 16S rRNA sequencing of cecal content was applied to identify gut microbiome with significantly altered in SD rats.
