Aspergillus sojae and Aspergillus parasiticus RNA-seq on soy

This study investigates the transcriptional responses of wild-type Aspergillus parasiticus and domesticated Aspergillus sojae grown under controlled conditions on 4% NaCl and soy media, with a cellophane barrier used to isolate surface interactions. By comparing the transcriptomes of these two fungal species, the research aims to uncover key expression differences that have arisen due to the domestication process. The findings will provide insights into how environmental conditions influence gene expression in fungi, with a focus on their roles in food fermentation processes.
