总汞属于重金属污染物指标,主要通过环境污染带入食品原料。《食品安全国家标准 食品中污染物限量》(GB 2762-2017)中规定,在新鲜蔬菜中总汞(以Hg计)限量值为0.01mg/kg。本数据主要用于监测天台县内流通领域豆芽总汞情况,通过检测数据,可以判断豆芽总汞是否符合国家标准,为监管部门提供技术支持和监管依据,进一步保障消费者的食品安全。1.样品来源:本项目抽检的豆芽全部来源于天台县域内流通环节市场主体销售的豆芽。 2.数据检测:样品经前处理后,根据GB5009.17-2021第三法检测原则,利用YQ519 ICP-MS等进行检测,得出数据。3.数据判定:总汞含量的计算,X=[(C1 - C0)x f x V ]/(m x 1000)。X为试样总汞含量,单位为mg/kg;C1为样品测得值,单位μg/L;C0为空白测得值,单位μg/L;m为试样质量,单位g;V为定容体积,单位mL;f为稀释倍数;豆芽中总汞含量技术指标为≤0.01mg/kg。 4、数据应用:通过抽检数据分析研判,我们可以判断豆芽中总汞含量是否符合食品安全标准,避免因总汞超标而产生的食品安全问题,为监管提供依据。
Total mercury is a heavy metal pollutant indicator, which is mainly introduced into food raw materials via environmental pollution. The National Food Safety Standard Limits of Contaminants in Foods (GB 2762-2017) stipulates that the limit value of total mercury (calculated as Hg) in fresh vegetables is 0.01 mg/kg. This dataset is mainly used to monitor the total mercury content of bean sprouts in the circulation sector within Tiantai County. Based on the test data, we can determine whether the total mercury content in bean sprouts meets the national standards, provide technical support and regulatory basis for regulatory authorities, and further safeguard consumers' food safety. 1. Sample Source: All bean sprouts sampled in this project are sourced from bean sprouts sold by market entities in the circulation links within the administrative region of Tiantai County. 2. Data Testing: After pre-treatment, the samples are tested using YQ519 ICP-MS and other instruments in accordance with the third method specified in GB 5009.17-2021, and the test results are obtained. 3. Data Judgement: The total mercury content is calculated by the formula: X = [(C1 - C0) × f × V] / (m × 1000). Here, X is the total mercury content of the test sample, with the unit of mg/kg; C1 is the measured value of the sample, with the unit of μg/L; C0 is the measured value of the blank sample, with the unit of μg/L; m is the mass of the test sample, with the unit of g; V is the constant volume, with the unit of mL; f is the dilution factor. The technical indicator for total mercury content in bean sprouts is ≤0.01 mg/kg. 4. Data Application: Through data analysis and assessment of the sampling test data, we can judge whether the total mercury content in bean sprouts meets the food safety standards, avoid food safety problems caused by excessive total mercury, and provide a basis for regulatory work.
