This collection of bacterial genomes comprises predominantly homo- and hetero-lactic acid bacteria pivotal in the vegetable fermentation process. The strains demonstrated optimal growth performance during vegetable fermentation and their genomes were sequenced using a combination of third generation ONT and Illumina technologies.
