Whole metagenome sequencing and de novo assembly of complete genomes from natural whey cultures NWCs.. Natural whey culture metagenome: bacteria, phages and plasmids from multiple species relevant for cheese fermentation

We de novo assemble complete genomes from the pre-dominant co-occurring bacterial species present in cheese starter cultures using a whole metagenome sequencing method. The shotgun metagenomics approach based on PacBio’s Sequel platform allowed us to completely assemble and circularize the pre-dominant bacterial species, phages and plasmids.
