Pit mud plays a leading role in the production of Chinese Strong Flavor Liquor (CSFL). However, artificially prepared pit mud frequently becomes aged during fermentation thus fail for sustainable usage as its low quality. Bacteria are the main determinants that responding for the quality of pit mud. the study aims at probing the reason and result of pit mud aging during fermentation by 16S rDNA sequencing and other related experiments.
