A dataset of synchrotron X-ray tomography scans of mozzarella microstructure for volumetric model benchmarking and food structure analysis. The dataset is divided into three splits: Base, Small, and Large, containing 4,728, 591, and 37,824 volumes respectively. It provides two classification targets: 25 cheese types and 149 cheese samples.
