The dietary fibre guar gum ameliorates experimental autoimmune encephalomyelitis via attenuated Th1 activation and differentiation

Dietary fibres are potent modulators of the immune response and are of particular interest for their ability to limit inflammation in various disease contexts. However, the term dietary fibre encompasses a biochemically diverse family of carbohydrates, and it remains unknown how different fibre sources influence immune cell function. Thus, we evaluated the effects of four different high-fibre diets in a head-to-head comparison on development of experimental autoimmune encephalomyelitis (EAE), a T cell-mediated mouse model of multiple sclerosis, and we discovered a potent ability of guar gum to reduce neuroinflammation.
