Kimoto-style seed mash is a traditional preparation method for sake that takes advantage of spontaneous lactic acid fermentation for inhibiting a growth of undesirable microorganism. We have carried out comprehensive analysis by using NGS in order to reveal the bacterial succession during kimoto-style seed mash making.
