Carry-over effects of feeding tropical fresh or air-dried roughage to Holstein-Friesian crossbred dairy cows on nutritional, techno-functional and sensory properties of mozzarella cheese

The manuscript titled " Carry-over effects of feeding tropical fresh or air-dried roughage to Holstein-Friesian crossbred dairy cows on nutritional, techno-functional and sensory properties of mozzarella cheese" has been accepted for publication in the Journal of Dairy Science. This dataset is a part of this manuscript. This dataset contains supplementary material for the evaluation of mozzarella cheese, including detailed definitions of descriptive sensory attributes for appearance, flavor/odor, taste, and texture. These attributes, adapted from Uzun et al. (2018), were used to assess product quality and sensory characteristics in the study.
