Bacterial microbiota associated with raw plant-based meat analogue products and their influences on selective enrichment for Escherichia coli O157:H7

In this project, the bacterial microbiota associated with raw plant-based meat analogue (PBMA) products were sampled in replicates and profiled using 16S rRNA (V3-V4) amplicon sequencing. By focusing on a two-step Escherichia coli O157:H7 enrichment procedure employed in the Canadian MFHPB-10 reference method, the cultural dynamics of bacterial communities recovered from both unadulterated and O157:H7-inoculated PBMA ground-meat imitation products were also examined using the same 16S metabarcoding approach.
