Lactobacillus acidipiscis YHS1A is a strict anaerobic lactic acid-producing bacteria (LABs) isolated from Chinese strong-flavor Baijiu (CSFB) eco-system, which could use glucose as the substrates for lactic acid (0 ~ 12.67 g/L) and a small amount of caproic acid (0 ~ 0.09 g/L) producing. In the CSFB fermentation industry, the lactic acid and caproic acid can be esterified into ethyl lactate and ethyl caproate, which are important flavor component. The 16S rRNA gene sequences was 99.68% identity to its most identical Lactobacillus. Specifically, Lactobacillus acidipiscis YHS1A could characteristically produce a small amount of caproic acid, which is different from other Lactobacillus. In order to further study the mechanism of its specific metabolic characteristics, genome sequencing was performed.
