LIKE-A-PRO WP8-T8.2.-P28-LA_Dataset AMES OECD471 (in vitro toxicity)

This dataset contains the complete results generated from the Ames bacterial reverse mutation assay (OECD Test Guideline 471) performed within the LIKE-A-PRO project to assess the mutagenic potential of alternative protein ingredients (APIs) and final food products (FPs). The study evaluated 12 APIs and 16 FPs using Salmonella Typhimurium TA98 and TA100, and Escherichia coli WP2 uvrA tester strains, both in the absence and presence of metabolic activation (S9 mix). The dataset includes raw and processed experimental data, including the number of revertants per plate, standard deviations, and mutagenicity index (MI) values obtained at the tested concentrations. Results showed no evidence of mutagenic activity for any of the assessed ingredients or products under the experimental conditions applied, with all MI values remaining below the acceptance criteria defined for the assay. These data contribute to the safety assessment framework developed in LIKE-A-PRO for the evaluation of innovative and sustainable protein sources intended for food applications
