Crop straw serves as an essential diet component for ruminants. Utilizing capsicum straw as feed could mitigate the forage scarcity challenge. Current research indicates that diets containing capsaicin can alter the structure of gastrointestinal microbiota, significantly regulating its composition . meanwhile, studies have suggested that feeding fermented straw increases the height of intestinal villi, expanding the nutrient absorption surface area, and thus enhancing nutrient uptake . However, there is still a lack of research on the preparation of fermented feed using chili straw.
