we conducted a biogeographical assessment of bacteria in a cafeteria kitchen to determine the diversity of microflora on each surface and to evaluate the spatial and temporal variations of the potential cross-contamination routes. High-throughput amplicon sequencing of the 16S rRNA gene from 13 surfaces in a cafeteria kitchen was performed every quarter for one year.
