This dataset presents the raw data of the volatile (HS-SPME-GC×GC-MS) profiles of barley and malt grains (BARLEY_G, MALT_G, ALM_G, AOM_G), malts hot steeps (ALM 25%, ALM 100%, AOM 50%, AOM 100%, Barley 100%, Malt 100%), and beers produced using 50% A. oryzae (barley koji strain) barley koji malts or 25% A. luchuensis var. kawachii (white koji) barley koji malts.
