Raw files of negative and positive ionization modes, acquired with a Q-Exactive Focus Orbitrap Mass Spectrometer (Thermo Fisher Scientific, Waltham, MA, USA) for the detailed lipidomic profile of mozzarella cheese, were reported. The lipid extraction was performed using an optimized accelerated solvent extraction procedure (Dionex™ ASE™ 350, Thermo Fisher Scientific, Waltham, MA USA) and the chromatographic separation was carried out with an UHPLC Ultimate 3000 system with a binary pump and a WPS-3000 autosampler TSL Analytical Split-Loop Thermostatted (Thermo Fisher Scientific, Waltham, MA, USA).
