甜蜜素（以环已基氨基磺酸钠计）是属无营养的甜味剂，主要用于增加食品的口感，其甜度是蔗糖的30~40倍。常用于糕点、饼干、饮品等食品中，过量使用可能会对身体健康造成危害。本数据主要用于监测天台县餐饮环节奶茶饮品中甜蜜素含量情况。通过检测数据，对奶茶饮品中甜蜜素含量进行安全性评价，为政府部门监管提供依据，避免因甜蜜素超标使用而产生食品安全问题。1、样品来源：本项目抽检的奶茶全部来源于天台县餐饮环节市场主体经营的奶茶。 2.数据检测：样品经前处理后，根据GB5009.97-2016第二法检测原则，利用液相色谱仪进行检测，得出数据。3、数据判定：甜蜜素量的计算，X=(C x V) /( M x 1000)。X为试样甜蜜素含量，单位为g/kg；C为测得值，单位μg/mL；V为样品溶液定量体积，单位mL；M为试样质量，单位g；奶茶中甜蜜素含量标准要求为≤0.65g/kg。 4、数据应用：通过抽检数据分析研判，我们可以判断奶茶中甜蜜素含量是否符合食品生产标准，避免因甜蜜素含量超标而产生的食品安全问题，为监管提供依据。

Sodium cyclamate (expressed as sodium cyclohexylsulfamate) is a non-nutritive sweetener primarily used to improve the taste of food products. It is 30 to 40 times as sweet as sucrose and is commonly utilized in pastries, biscuits, beverages and other food items. Excessive use of sodium cyclamate may pose hazards to human health.

This dataset is mainly designed to monitor the sodium cyclamate content in milk tea beverages sold in the catering sector of Tiantai County. Based on the test results, safety evaluation of sodium cyclamate content in milk tea beverages can be conducted, providing a scientific basis for government supervision and preventing food safety problems caused by excessive use of sodium cyclamate.

1. Sample Source: All milk tea samples collected in this project are sourced from catering business entities operating in Tiantai County that offer milk tea beverages.
2. Data Testing: After pre-treatment, the samples were tested using a liquid chromatograph in accordance with the second method specified in GB 5009.97-2016, and the corresponding test data were obtained.
3. Data Determination: The calculation formula for sodium cyclamate content is X=(C × V)/(M × 1000). Where X represents the sodium cyclamate content in the test sample, with the unit of g/kg; C represents the measured value, with the unit of μg/mL; V represents the fixed volume of the sample solution, with the unit of mL; M represents the mass of the test sample, with the unit of g; The standard limit for sodium cyclamate content in milk tea is ≤0.65 g/kg.
4. Data Application: Through analysis and evaluation of the sampled data, it can be determined whether the sodium cyclamate content in milk tea meets food production standards, preventing food safety issues caused by excessive sodium cyclamate levels and providing a reliable basis for regulatory work.
