In this study, pepper straw was used as raw material and fermented by adding different proportions of molasses. The fermentation effect of pepper straw micro-storage was evaluated by sensory evaluation, fermentation quality determination and nutritional quality determination of different proportions of molasses, and the optimal ratio of molasses was selected.
