Distillery Transcriptomics with Recycled Water

The goal of this study is to compare gene expression profiles of bourbon distillery yeast fermentations grown in recycled reverse osmosis concentrate (ROC) water versus city tap water. Distillers produce ROC, which contains higher amounts of dissolved and suspended substances, as a waste product during bottling operations. By analyzing the transcriptomic data, the study aims to understand how the use of recycled ROC water impacts yeast metabolism and stress response with the goal of informing future water recycling efforts. This research is relevant as it explores sustainable practices in the bourbon industry, potentially reducing water consumption and promoting environmental conservation without compromising product quality.
