Paecilomyces variotii is an ascomycete fungus that is frequently encountered as a food spoiler, predominantly in juices and ice tea. There is a large degree of heterogeneity between the strains regarding their resistance to food preservation approaches. We sequenced strains of this fungus to determine the genetic basis for these differences between the strains.
