The data provide an overview of the supply balance of eggs. The production of eggs for consumption and eggs for hatching total the total production of eggs in Germany. For each year, usable production, export and import, domestic use, food consumption, degree of self-sufficiency, consumption per head, stock of laying hens and laying performance per hen are shown in the lower section.
Comments: Calculated until 1998 with an egg weight of 61 g. Calculated in 1999 with an egg weight of 61.5 g. From the year 2000, the egg weight is expected to be 62 g. From 2018, flat-rate calculation of external trade volumes in tonnes (62g per egg). 1) Livestock of laying hens without parent stock, including estimates for non-notifiable holdings with less than 3,000 hen holdings. Import/export in shell value: from 2011 Calculation of shell equivalent using Eurostat factors (not comparable with years before).Inland use excluding stocks of egg-processing enterprises. The degree of self-sufficiency from 2013 onwards in relation to the production of consumer eggs in pieces. The degree of self-sufficiency is the ratio of usable egg production to consumption and food consumption. Self-sufficiency before 2013 in terms of total egg production in tonnes. Food consumption kg per head: Calculation basis data census 2011. Last year's figures are preliminary.
