To reveal the microbial community structure during the Sauce-flavor baijiu fermentation process, amplicon sequencing was performed on jiupei from both the stacking fermentation and pit fermentation stages. The stacking fermentation stage includes 6 rounds (R1-R6), while the pit fermentation stage consists of 7 rounds (R1-R7).
